Rispen's Sheep GoudaJacob Rispens is an iconic shephard from the town of Morra in the far north of the Netherlands. His herd of 300 Lacaune sheep is exactly 72 more than the population of the town he grew up in. Fromagerie L'Amuse in Amsterdam hand select certain wheels, and age them for six months. The result is one of the most buttery and delicate wheels of gouda, with notes of buttermilk and dry hay and just a touch of sweetness.
